Chili Cheese Dip
1 lb lean ground beef (you can use ground turkey as well)
1 jar (16oz) salsa (use the heat that you like)
1 lb block cheese, cubed
4 tsp chili powder
3/4 tsp garlic powder
3/4 tsp ground cumin
Cook ground beef in large skillet on medium heat until cooked through. stirring frequently. Drain off grease. Stir in remaining ingredients and spices. Cook and stir over medium heat until cheese is melted. Serve hot with tortilla chips. Garnish with green onions or cilantro if desired. You can also have some sour cream on the side as well
Hot Crabmeat Appetizer
1pkg (8oz) cream cheese softened
1 can (7 1/2oz) crabmeat, drained and flaked
2 Tbsp finely chopped onions
2 Tbsp milk
1/2 tsp prepared horseradish
1/4 tsp salt
dash pepper
1/3 c. sliced almonds toasted
Heat oven to 375. Mix all ingredients except almonds until well blended. Spoon mixture into a 9inch pie plate, sprinkle with almonds
Bake 15 min. Serve with your favorite crackers
Pumpkin Cookies
2 c. All-purpose flour
1 1/3c. Quick oats
1tsp baking powder
1tsp ground cinnamon
1/2 tsp salt
2 sticks butter/margarine softened
1c. granulated sugar
1c. firmly packed brown sugar
1c. Pure Pumpkin
1 egg
1tsp vanilla
3/4 c. chopped walnuts
3/4c. raisins
Heat oven to 350. Grease baking sheet
In a med bowl, combine flour, oats, baking soda, cinnamon and salt; mix well. In large bowl beat butter and both sugars with electric mixer until light and fluffy. Add pumpkin, egg, vanilla; mix well. Add flour mixture and mix well. Stir in nuts and raisins. Drop 1/4c. dough onto prepared baking sheet; spread into 3inch circle or oval. Repeat until all dough is used.
Bake 14-16 min or until cookies are firm and lightly browned. Cool 2min on baking sheet; remove to wire racks. Cool completely. Decorate if desired with icing, chips, candies, raisins or nuts.
Crunch Bars
35 Saltine Crackers
1 Stick of butter/margarine
1/2 c. packed brown sugar
1pkg (8oz) Baker's semi sweet chocolate, chopped
1 c. chopped walnuts, toasted (or u can use ur favorite nut)
Heat oven to 400. Place crackers in a single layer in foil-lined large cookie sheet. Cook butter and sugar in sauce pan on med-high heat until butter is melted and mixture is well blended, stirring occasionally. Bring to a boil; cook 3 min without stirring. Spread onto crackers.
Bake 5-7min ot until topping is golden brown. Immediately sprinkle with chocolate; let stand 5 min or until chocolate is softened. Spread the chocolate over the ingredients in pan; sprinkle with nuts. Cool. Break into pieces.
Makes 16 servings

Spicy Mostacciolli Mexicana
I've made this recipe for years and it's simple and tasty!!-Andrea
SPICY MOSTACCIOLI MEXICANA
3 c. (8 oz.) Sam Giorgio mostaccioli, uncooked
1 tbsp. vegetable oil
1/2 c. diced green pepper
1 (14 1/2 oz.) can stewed tomatoes
1 (12 oz.) jar hot or mild salsa
1 (15 1/2 oz.) can red kidney beans, drained
Cook mostaccioli as directed on package; drain. Meanwhile, in large saucepan, heat oil and cook green pepper until crisp. Add remaining ingredients, cook stirring occasionally, until heated through. Stir in mostaccioli before serving. Makes 5 to 6 servings.
Spanish Chicken and Rice
Ok this is definately nothing fancy at all, but it is a pretty cheap and quick meal to fix. This is enough for 2-3 people depending on how much they eat so you can double if you have more eating it
Box of Spanish rice mix (I use zatarains)
Small jar of ur favorite salsa (I use paul newmans pineapple salsa)
1 to 1 1/2lbs of chicken breast cut into chunks (not cooked)
bag of shredded cheese, ur favorite kind
Preheat oven to 400. In a 8x8 casserole dish, you can use bigger for more room and if you are making double, spray with pam and pour in the spanish rice mix. Add 2/3 cup of water and stir until dissolved. Add small jar of salsa and mix. Put chicken into the rice mixture and stir. Bake for about 30 min and check. You may need to bake 5-10 min longer depending on the size of chicken chunks and check your rice to make sure it is tender. Add the desired amount of shredded cheese to the top and bake about 5 more minutes until the cheese is melted.
